My favorite instrumental will always be Deep Purple's "Son of Alerik." Metallica's "Orion" is pretty good, and Pink Floyd were the kings of rock instrumentals ("Mudmen," "Careful With That Axe, Eugene," "Marooned," live versions of "A Saucerful of Secrets," etc.).

The instrumental version of Dream Theater's "The Count Of Tuscany" is simply amazing.
I find that the instrumental version and the original evoke totally different reactions for me. It's as if they are two completely different songs.
