Anything with potatoes. Those tubers are very flexible, you can turn them into mashed taters, french fries, latkes, potato chips, mojos, croquettes.
Fun fact: Potatoes were known as a staple way back, it seems that people can live a life while eating only potatoes.

Best meal I ever had was in a tiny restaurant in Carcassonne in the Occitanie region of France. It could only hold 14 people and there were 3 chefs for the 14 diners. One French and the other two Japanese. Kangaroo steak was the speciality and it was beyond superb. I will probably never have another meal like that in my life again. A once in a lifetime experience. Sadly the restaurant owner/chef and staff were swallowed up by some wealthy businessman and they relocated to Paris somewhere where I believe they cook exclusively for said businessman's family. Lucky bugger. The restaurant was called L'Arcadia at the time but I don't know if it still exists.
One that does still exist and is worth every penny is L'Entrecote, Montpellier. Stunning meals and not at all expensive -

im not a fan of Kangaroo, it really is an acquired taste IMO...
if you ever get the chance to try Emu Steak Jerome, take it mate...
succulent, juicy and melt-in-your-mouth stuff...
BTW: I know a little place on the Eastern outskirts of Perth that cooks Emu superbly, usually holds two people including one cook!
