I've already heard Black Saint and the Sinner Lady (Best album ever made as far as I'm concerned), Mingus Ah Um, and Blues and Roots, and I enjoy them all very much. What other classic albums has he made

Mingus released sixty or more albums during his short life span of only 57 years ! I would choose some later works - Changes 1 & 2, Cumbia & Jazz Fusion, Three or Four Shades of Blues, Mingus Mingus Mingus Mingus Mingus (also known as Mingus 5), Let My Children Hear Music for starters. His concerts are great too with Eric Dolphy and Miles Davis.
