Dani's daughter Krystl invited us over for a Roast Beef meal last night as an early birthday dinner for Dani.
so good to eat when cooking is not involved on my part!!!

my usual annual ritual of watching the Australian Football League Grand Final with my dad yesterday
so i had dinner at my parents house.
Salad Platter with Prawns and my mum's homemade spinach/rocotta sausage rolls.

lovely refreshing salad tonight...
a concoction of Iceberg Lettuce, cherry tomatoes, red grapes, diced pineapple, sweetcorn kernals, Greek Feta, beetroot with cocktail prawns stirred through it.
other fruit that works well with salad includes, watermelon, canteloupe, pommegranite, mandarin/orange segments, apple, mango.
fruit just takes it to another lever altogether and so refreshing.
a dressing made from olive oil and either lemon/orange or lime juice just sends flavour explosions to the tastebuds for sure.

i butterflied a chicken and put it in the oven with a blend of Moroccan spices to roast.
put some of the same spices on the potatoes, roasting them also.
